Mixologist's Notes

  • Authentic Irish Coffee relies on fresh hot coffee and lightly whipped cream—thick whipped cream or aerosol cream won’t create the right floating effect.
  • The Buena Vista Café in San Francisco remains the most famous place to enjoy this drink.

About the Irish Coffee cocktail

The Irish Coffee is one of the most beloved warm cocktails in the world, blending strong coffee, Irish whiskey, sugar, and cream into a soothing yet spirited drink.

It was first created in 1943 at Foynes Airbase in County Limerick, Ireland, by chef Joe Sheridan.

He served it to weary American travelers on a cold evening, and the comforting combination quickly became a hit.

The drink gained international fame in the 1950s when travel writer Stanton Delaplane introduced it to San Francisco’s Buena Vista Café, where bartenders perfected the technique of floating cream on top.

Today, the Buena Vista alone is said to serve thousands of Irish Coffees a day, cementing its status as a global classic.

What Makes the Irish Coffee Cocktail Special

The Irish Coffee is a perfect marriage of four simple elements: hot coffee, rich Irish whiskey, sweetened sugar, and lightly whipped cream.

The contrast between the warm, robust coffee and the cool, silky cream makes for an unforgettable drinking experience.

It’s both a cocktail and a comfort ritual—warming in winter, ideal as a nightcap, and elegant enough to be served at brunches or holiday gatherings.

Spirit Swaps and Food Pairings

  • Swaps: While Irish whiskey is traditional, spiced rum or bourbon can offer interesting variations.

    • Flavored syrups (vanilla, cinnamon) may replace sugar for a twist.

  • Pairings: Irish Coffee pairs beautifully with pastries, chocolate desserts, fruit tarts, or hearty breakfasts.

    • It’s also a natural fit for holiday meals or as an after-dinner treat.

Closing Thoughts

The Irish Coffee is more than just a cocktail—it’s an experience. With its warming combination of coffee, whiskey, sugar, and cream, it delivers both comfort and elegance, making it a drink that has stood the test of time.

Perfect for winter nights, holiday tables, or whenever you need a little warmth in a glass.
