  • 2 oz dark rum (preferably Goslings Black Seal) (60 ml)
  • ½ oz fresh lime juice (15 ml)
  • 4–5 oz chilled ginger beer (120–150 ml)
  • Lime wedge, for garnish

Directions

  1. Fill a highball glass with ice.
  2. Pour in ginger beer (and lime juice, if using).
  3. Gently float the dark rum on top by pouring it over the back of a spoon.
  4. Garnish with a lime wedge and serve without stirring (until ready to drink).

  • Legally, only Gosling’s can be used if you’re calling it a Dark ’n Stormy.
