Ingredients

  • 1 oz gold rum (30 ml)
  • ½ oz Galliano (15 ml)
  • 1 oz pineapple juice (30 ml)
  • ¼ oz fresh lime juice (7 ml)
  • Prosecco or dry sparkling wine, to top (about 1–2 oz or 30–60 ml)
  • Pineapple leaf/wedge or lime twist, for garnish

Directions

  1. Add all ingredients except the sparkling wine to a shaker filled with ice.
  2. Shake for about 10–12 seconds until well chilled.
  3. Strain into a chilled glass.
  4. Top with sparkling wine and stir gently
  5. Garnish with a pineapple wedge/leaf or lime twist.
