Ingredients

  • 2 oz gin (60 ml)
  • 1 oz fresh lemon juice (30 ml)
  • 0.75 oz simple syrup (22 ml)
  • 1 egg white (optional, 30 ml)
  • 1–2 oz chilled soda water (30–60 ml), to top

Directions

  1. Add gin, lemon juice, simple syrup, and egg white (if using) to a shaker without ice and dry shake for 15 seconds.
  2. Add ice and shake again for 15–30 seconds until well chilled and frothy.
  3. Strain into a chilled fizz or small Collins glass without ice.
  4. Top gently with soda water to lift the foam.
